Carrot Cake

(350º - 1 hour)

  • 2 cups sugar
  • 1 tsp. salt
  • 2 c. grated carrots
  • 1 cup coconut
  • 3 eggs
  • 1½ cup nuts, chopped
  • ½ cup oil
  • 3 cups flour
  • 2 tsp. vanilla
  • 2 tsp. baking soda
  • 1 cup (small can) pineapple (drained)

Mix all dry ingredients, add oil, eggs, carrots and drained pineapple. Mix until well blended. Bake in well greased or tube pan at 350º for one hour.

Frosting

Blend until smooth. Frost.
